Honey is made from 80% natural sugar — mostly fructose and glucose. Due to the high level of fructose, honey is sweeter than table sugar. The remainder consists of 18% is water. 2% minerals, vitamins, pollen and protein. Honey is a favorite around the world. It literally will last almost forever. Even when it turns solid, you simply put the container in warm water for a while and it will turn back to liquid.
