Beans are one of the most popular of all of the world’s foods, and their use dates all the way back to the beginning of recorded history. They were a year-round source of nutrients for the ancient Greeks, Egyptians, and the native peoples of our continent .They’re among the most nutritious, economical foods available. Pinto Beans

The pinto bean (Spanish: frijol pinto, literally “painted bean”) is named for its mottled skin (compare pinto horse), hence it is a type of mottled bean. It is the most common bean in the United States and northwestern Mexico, and is most often eaten whole in broth or mashed and refried. The bean gives a typical person more than 50 percent of daily recommended values in fiber, folate and manganese, as well as a healthy dose of protein.

Red Lentils

Red Lentil Beans

Red Lentils are legumes that generally have a rich nutty flavor. They are grown in pods, which contain one or two seeds each. They are generally no more than a 1/4 of an inch in diameter. Lentils cook much faster than dried beans and do not require soaking. Lentils have good nutritional value, containing dietary fiber, B-vitamins, protein, and hardly any calories. Lentils can be stored indefinitely but after a year their color will begin to fade and they will become dryer and take longer to cook.

Black Beans

Beans are nature’s health food. They have an exceptionally high fiber content, and they’re a fine source of protein, as well as calcium, iron, folic acid and potassium. Black beans stand out because in them there are at least eight different flavonoids, which are antioxidants. Called anthocyanins, they’re found in red grapes and red wine, red cabbage and other dark red fruits and vegetables. Black beans also contain small amounts of omega-3 fats, three times as much as other legumes provide. These beans are some of the healthiest you can purchase.
